French Glacé Cherry Coconut Macaroons

200g desiccated coconut

100g caster sugar

1 large egg

1 tablespoon cornflour

100g French glacé cherries + French glacé cherry halves, to decorate


Preheat the oven to 180°C and line a baking tray with parchment.

Put all ingredients in a large bowl, and mix thoroughly until combined.

Using hand or a small mould mould the mixture into mounds and place an inch or two apart on the baking tray. Top with French Glacé Cherry halves.

Bake for 15 to 20 minutes until lightly browned.

Remove from the oven, and leave on the tray for 10 minutes, then finish cooling on a rack.

When cold, they will keep in a tin for a long time! I sometimes add pink colouring to the mixture for pink mounds. And for a more exciting cake add chopped cherries to the mix and spin with dark chocolate.
